Ingredients:
- 1 cup (240g) creamy peanut butter
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract (optional)
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract (if using). Mix until well combined.
- Roll the dough into 1-inch balls. Place on the prepared baking sheet, leaving a little space between each cookie.
- Use a fork to flatten each cookie in a criss-cross pattern.
- Bake for 8-10 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
