Ingredients:

  • 1 cup rolled oats (old-fashioned)
  • 1/2 cup creamy peanut butter
  • 3 tablespoons natural sweetener (honey or maple syrup)
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract

Instructions:

  1. Combine the wet ingredients: In a microwave-safe bowl, gently warm the peanut butter and honey/maple syrup for 30–60 seconds, or until slightly runny. Stir in the vanilla extract until fully combined.
  2. Combine the dry ingredients: In a separate large mixing bowl, add the rolled oats and ground flaxseed.
  3. Mix: Pour the warm peanut butter mixture over the dry ingredients. Stir well using a sturdy spatula until all the oats are thoroughly coated and a thick dough forms.
  4. Chill (Optional but recommended): If the mixture is too soft or sticky to roll, cover the bowl and chill in the refrigerator for 15 minutes to allow the oats to fully hydrate.
  5. Roll: Roll the mixture into 12 equally sized balls (approximately 1.25 inches each). Store the finished oat balls in an airtight container in the refrigerator for up to 1 week.
