Ingredients:

  • 3 large overripe bananas
  • 1/3 cup (75g) unsalted butter, melted
  • 1/2 cup (100g) granulated white sugar
  • 1/4 cup (50g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/4 cup (30g) chopped walnuts

Instructions:

  1. Grease a 6x3 inch or 7x3 inch loaf pan with butter or non-stick spray and line with a parchment paper 'sling' for easy removal.
  2. In a large mixing bowl, mash the overripe bananas with a fork until they reach a liquid-like consistency with minimal lumps.
  3. Stir the melted and cooled butter into the mashed bananas until combined.
  4. Add the granulated sugar, brown sugar, egg, and vanilla extract. Whisk gently until the mixture is smooth.
  5. Sift the flour, baking soda, sea salt, and cinnamon directly over the wet ingredients. Fold together using a spatula until just combined, ensuring you do not overmix.
  6. Gently fold in the semi-sweet chocolate chips and chopped walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Set the air fryer to 320°F (160°C). Place the pan in the air fryer basket.
  9. Cook for 35 minutes. Test the center with a toothpick; if it comes out clean or with a few moist crumbs, the bread is done.
  10. Allow the bread to cool in the pan for at least 10 minutes before lifting it out using the parchment sling to cool completely on a wire rack.
