Ingredients:

  • 1.5 lbs boneless skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp cornstarch
  • 1 tbsp avocado oil
  • 1 tsp garlic powder
  • 0.5 tsp kosher salt
  • 0.5 tsp cracked black pepper
  • 0.33 cup raw honey
  • 3 tbsp low-sodium soy sauce
  • 4 cloves fresh garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp rice vinegar

Instructions:

  1. Pat the chicken pieces completely dry with paper towels. In a large bowl, toss the chicken with avocado oil until coated. Add the cornstarch, garlic powder, salt, and pepper, shaking until every piece has a dull, powdery coating.
  2. Preheat the air fryer to 400°F (200°C). Arrange the chicken in a single layer in the air fryer basket, ensuring pieces are not touching.
  3. Air fry for 12 minutes, shaking the basket halfway through, until the coating is crispy and golden.
  4. While the chicken is cooking, whisk together the honey, soy sauce, minced garlic, grated ginger, and rice vinegar in a small bowl.
  5. Transfer the crispy chicken into a bowl and toss with the honey garlic glaze. Return the glazed chicken to the air fryer for a final 2 minutes at 400°F to caramelize the sauce into a high-gloss finish.
