Ingredients:

  • 1/2 cup (65g) All-purpose flour
  • 1/4 cup (50g) Brown sugar, packed
  • 1 tsp (2g) Ground cinnamon
  • 3 tbsp (42g) Cold unsalted butter, cubed
  • 1 1/2 cups (190g) All-purpose flour
  • 1 tbsp (6g) Baking powder
  • 1 tsp (2g) Ground cinnamon
  • 1/4 tsp (1g) Salt
  • 1 Large egg
  • 1/2 cup (120g) Unsweetened applesauce
  • 1/3 cup (80ml) Maple syrup
  • 1/4 cup (60ml) Whole milk
  • 1 tsp (5ml) Vanilla extract
  • 1 1/2 cups (225g) Firm apple, peeled and finely diced

Instructions:

  1. Preheat your oven to 375°F (190°C). In a medium bowl, whisk together the 1/2 cup flour, brown sugar, and 1 tsp cinnamon. Use your fingertips or a fork to rub the cold butter into the mixture until it resembles coarse sand with some pea-sized lumps. Set aside in the fridge.
  2. In a large bowl, whisk together 1 1/2 cups flour, baking powder, 1 tsp cinnamon, and salt.
  3. In a separate jug, beat the egg, then stir in the applesauce, maple syrup, milk, and vanilla until smooth.
  4. Pour the wet ingredients into the dry flour mixture, stirring with a spatula only until no streaks of flour remain.
  5. Gently fold in the diced apples using a spatula until the apple chunks are evenly distributed, ensuring the batter remains slightly lumpy.
  6. Spoon the batter evenly into a lined 12-cup muffin tin. Top each muffin with a generous pinch of the chilled crumble.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
