Ingredients:
- 1 ½ cups (180g) all-purpose flour
- ½ tsp salt
- 1/4 cup (50g) granulated sugar
- 1/2 cup (115g) unsalted butter, cold and cubed
- 1 large egg yolk
- 3-4 tbsp cold water
- 4 medium apples (about 2 lbs or 900g), peeled, cored, and sliced
- 1/2 cup (100g) granulated sugar
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 2 cups (500ml) apple juice (or cider)
- 1/4 cup (50g) granulated sugar
- 1 ½ tsp powdered pectin
- 1 tbsp lemon juice
Instructions:
- Combine flour, salt, and sugar in a mixing bowl.
- Cut in the cold butter until crumbly.
- Blend in egg yolk and water until dough forms.
- Chill for 30 minutes.
- In a bowl, mix sliced apples with sugar, cinnamon, and lemon juice.
- Set aside to marinate for 15 minutes.
- In a saucepan, combine apple juice, sugar, and pectin.
- Bring to a boil, stirring constantly.
- Boil for 1 minute, then add lemon juice and remove from heat.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled pastry and fit it into the tart pan.
- Lay the apple filling evenly in the crust.
- Pour a thin layer of apple jelly over the apple filling.
- Bake for 35-40 minutes until apples are tender and crust is golden brown.
- Allow to cool slightly before slicing and serving.
