Ingredients:

  • 1 ½ cups (180g) all-purpose flour
  • ½ tsp salt
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • 1 large egg yolk
  • 3-4 tbsp cold water
  • 4 medium apples (about 2 lbs or 900g), peeled, cored, and sliced
  • 1/2 cup (100g) granulated sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 2 cups (500ml) apple juice (or cider)
  • 1/4 cup (50g) granulated sugar
  • 1 ½ tsp powdered pectin
  • 1 tbsp lemon juice

Instructions:

  1. Combine flour, salt, and sugar in a mixing bowl.
  2. Cut in the cold butter until crumbly.
  3. Blend in egg yolk and water until dough forms.
  4. Chill for 30 minutes.
  5. In a bowl, mix sliced apples with sugar, cinnamon, and lemon juice.
  6. Set aside to marinate for 15 minutes.
  7. In a saucepan, combine apple juice, sugar, and pectin.
  8. Bring to a boil, stirring constantly.
  9. Boil for 1 minute, then add lemon juice and remove from heat.
  10. Preheat the oven to 350°F (175°C).
  11. Roll out the chilled pastry and fit it into the tart pan.
  12. Lay the apple filling evenly in the crust.
  13. Pour a thin layer of apple jelly over the apple filling.
  14. Bake for 35-40 minutes until apples are tender and crust is golden brown.
  15. Allow to cool slightly before slicing and serving.
