Ingredients:
- 1 cup Filtered Water
- ½ cup Light Brown Sugar, packed
- 2 medium Cinnamon Sticks
- 2 whole Star Anise pods
- 4 whole Cloves
- 3 cups High-Quality Apple Cider (chilled)
- 5 cups 100% Pomegranate Juice (chilled)
- Approx. 200 mL Chilled Spiced Syrup
- 2 cups Plain Sparkling Water or Club Soda (chilled)
- ¼ cup Fresh Pomegranate Arils
- 1 thinly sliced Apple (for garnish)
- 6 sprigs Fresh Rosemary (for garnish)
Instructions:
- Place the water, brown sugar, cinnamon sticks, star anise, and cloves into the small saucepan.
- Heat over medium heat, stirring gently until the sugar is completely dissolved. Bring the mixture to a gentle simmer for 5 minutes.
- Remove the pan from the heat, cover, and allow the spices to steep for an additional 10 minutes to ensure maximum flavor extraction.
- Pour the syrup through a fine-mesh sieve (or a sieve lined with muslin) into a clean jug, discarding the spices. Place the syrup in the refrigerator to cool completely—at least 30 minutes.
- Once the spiced syrup is completely chilled, pour the apple cider and the pomegranate juice into the large serving pitcher.
- Stir in ¾ of the cooled spiced syrup (approximately 150 mL). Taste the mixture and add the remaining syrup if a sweeter flavor is desired.
- Fill highball glasses or festive stemware with ice cubes.
- Fill each glass about ¾ full with the chilled apple/pomegranate base mixture from the pitcher.
- Top the remaining ¼ of the glass with chilled sparkling water or club soda.
- Garnish immediately with 1-2 thin apple slices, a generous sprinkle of pomegranate arils, and a single sprig of rosemary (rubbed gently to release oils) for an aromatic finish.
