Ingredients:

  • 4 medium Roma tomatoes, quartered
  • 1 small onion, roughly chopped
  • 2-3 jalapeño peppers, stemmed and halved
  • 2 cloves garlic, peeled
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon salt, or to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, place the quartered tomatoes, chopped onion, jalapeño peppers, and garlic cloves.
  3. Roast for 15 minutes, or until tomatoes are blistered and everything is tender.
  4. Carefully transfer the roasted vegetables to a blender or food processor. Add chopped cilantro, lime juice, and salt.
  5. Blend until smooth, tasting and adjusting salt or lime juice as needed.
  6. For a deeper flavor, transfer the salsa to a saucepan and simmer on low heat for 10 minutes.
  7. Allow to cool slightly, then serve with your favorite chips, tacos, or grilled meats.
