Ingredients:
- 4 medium Roma tomatoes, quartered
- 1 small onion, roughly chopped
- 2-3 jalapeño peppers, stemmed and halved
- 2 cloves garlic, peeled
- 2 tablespoons fresh cilantro, chopped
- 1 tablespoon lime juice
- 1 teaspoon salt, or to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- On a baking sheet, place the quartered tomatoes, chopped onion, jalapeño peppers, and garlic cloves.
- Roast for 15 minutes, or until tomatoes are blistered and everything is tender.
- Carefully transfer the roasted vegetables to a blender or food processor. Add chopped cilantro, lime juice, and salt.
- Blend until smooth, tasting and adjusting salt or lime juice as needed.
- For a deeper flavor, transfer the salsa to a saucepan and simmer on low heat for 10 minutes.
- Allow to cool slightly, then serve with your favorite chips, tacos, or grilled meats.
