Ingredients:

  • 2 tbsp unsalted butter
  • 1/2 cup white onion, finely diced
  • 2 cloves garlic, minced
  • 4 oz diced green chiles
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • 8 oz white American cheese, cubed
  • 8 oz sharp cheddar cheese, freshly grated
  • 4 oz cream cheese, softened
  • 1 cup whole milk
  • 1/4 cup lime juice
  • salt to taste
  • black pepper to taste
  • fresh cilantro for garnish

Instructions:

  1. Melt the butter over medium heat in a heavy-bottomed saucepan.
  2. Add diced onions and sauté until translucent, about 3 minutes.
  3. Stir in minced garlic, diced green chiles, cumin, and chili powder; cook for 60 seconds until fragrant.
  4. Reduce heat to medium-low. Slowly pour in the milk and softened cream cheese, whisking constantly until simmering.
  5. Gradually add cubed American cheese and grated cheddar one handful at a time, stirring continuously until the sauce is glossy and fully incorporated.
  6. Stir in lime juice and season with salt and black pepper to taste.
  7. Remove from heat immediately once a smooth, pourable consistency is reached and garnish with fresh cilantro.
