Ingredients:
- 2 tbsp unsalted butter
- 1/2 cup white onion, finely diced
- 2 cloves garlic, minced
- 4 oz diced green chiles
- 1/2 tsp ground cumin
- 1/4 tsp chili powder
- 8 oz white American cheese, cubed
- 8 oz sharp cheddar cheese, freshly grated
- 4 oz cream cheese, softened
- 1 cup whole milk
- 1/4 cup lime juice
- salt to taste
- black pepper to taste
- fresh cilantro for garnish
Instructions:
- Melt the butter over medium heat in a heavy-bottomed saucepan.
- Add diced onions and sauté until translucent, about 3 minutes.
- Stir in minced garlic, diced green chiles, cumin, and chili powder; cook for 60 seconds until fragrant.
- Reduce heat to medium-low. Slowly pour in the milk and softened cream cheese, whisking constantly until simmering.
- Gradually add cubed American cheese and grated cheddar one handful at a time, stirring continuously until the sauce is glossy and fully incorporated.
- Stir in lime juice and season with salt and black pepper to taste.
- Remove from heat immediately once a smooth, pourable consistency is reached and garnish with fresh cilantro.
