Ingredients:

  • 1 (15-ounce/425g) can chickpeas, drained and rinsed (or 1 ½ cups cooked chickpeas)
  • 2 ripe avocados, pitted and roughly chopped
  • ¼ cup (60ml) fresh lemon juice
  • 2 tablespoons (30ml) extra virgin olive oil, plus more for drizzling
  • 2 cloves garlic, minced
  • ¼ cup (60ml) water (more if needed for consistency)
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt, or to taste
  • Pinch of red pepper flakes (optional)
  • Fresh cilantro, for garnish (optional)
  • Everything Bagel Seasoning, for garnish (optional)

Instructions:

  1. Drain and rinse the canned chickpeas thoroughly. If using dried, soak and cook them until tender.
  2. In the food processor bowl, combine the chickpeas, avocado, lemon juice, olive oil, garlic, water, cumin, salt, and red pepper flakes (if using).
  3. Process the mixture until completely smooth and creamy, scraping down the sides of the bowl as needed. Add more water, 1 tablespoon at a time, if a thinner consistency is desired.
  4. Taste the Avocado Hummus and adjust the seasoning as needed. Add more lemon juice for tanginess, salt for flavor, or red pepper flakes for heat.
  5. Transfer the hummus to a serving bowl. Drizzle with extra virgin olive oil and garnish with fresh cilantro and Everything Bagel Seasoning (if desired). Serve immediately or chill for later.
