Ingredients:
- 1 (15-ounce/425g) can chickpeas, drained and rinsed (or 1 ½ cups cooked chickpeas)
- 2 ripe avocados, pitted and roughly chopped
- ¼ cup (60ml) fresh lemon juice
- 2 tablespoons (30ml) extra virgin olive oil, plus more for drizzling
- 2 cloves garlic, minced
- ¼ cup (60ml) water (more if needed for consistency)
- ½ teaspoon ground cumin
- ¼ teaspoon salt, or to taste
- Pinch of red pepper flakes (optional)
- Fresh cilantro, for garnish (optional)
- Everything Bagel Seasoning, for garnish (optional)
Instructions:
- Drain and rinse the canned chickpeas thoroughly. If using dried, soak and cook them until tender.
- In the food processor bowl, combine the chickpeas, avocado, lemon juice, olive oil, garlic, water, cumin, salt, and red pepper flakes (if using).
- Process the mixture until completely smooth and creamy, scraping down the sides of the bowl as needed. Add more water, 1 tablespoon at a time, if a thinner consistency is desired.
- Taste the Avocado Hummus and adjust the seasoning as needed. Add more lemon juice for tanginess, salt for flavor, or red pepper flakes for heat.
- Transfer the hummus to a serving bowl. Drizzle with extra virgin olive oil and garnish with fresh cilantro and Everything Bagel Seasoning (if desired). Serve immediately or chill for later.
