Ingredients:
- 2 large pasture-raised eggs
- 1 large Hass avocado

Instructions:
- Fill your saucepan with enough water to cover the eggs by an inch and bring to a rolling boil. Gently place the 2 large pasture raised eggs into the water. Reduce heat slightly to a steady simmer and cook for 10 minutes until the whites are fully opaque and set.
- Immediately move eggs to a bowl of ice water for 5 minutes until they feel cold to the touch.
- Crack the shell all over and peel under cold running water until the egg is smooth and white.
- Halve the 1 large Hass avocado, remove the pit, and scoop the flesh into a bowl.
- Drizzle the 1 tsp fresh lemon or lime juice over the avocado until every surface is lightly coated.
- Use a fork to press down on the avocado until it reaches a chunky, spreadable consistency.
- Cut your hard boiled eggs into halves or quarters until the yellow yolks are beautifully exposed.
- Plate the avocado, top with egg, and sprinkle the salt, pepper, red pepper flakes, bagel seasoning, and chives until the dish looks vibrant and textured.
