Ingredients:

  • 2 cups all-purpose flour (250g)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup unsalted butter, cold and cubed (57g)
  • 3/4 cup buttermilk (180ml)
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • 1 tablespoon honey
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and baking soda.
  3. Add cold, cubed butter and combine until the mixture resembles coarse crumbs.
  4. Stir in ground cumin, coriander, paprika, honey, and cayenne pepper until evenly distributed.
  5. Pour in the buttermilk and stir until just combined. Avoid over-mixing.
  6. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  7. On a floured surface, roll the dough to about 1-inch thickness and cut out biscuits.
  8. Place the biscuits on the prepared baking sheet and bake for 15-20 minutes until golden brown.
  9. Allow to cool slightly on a wire rack before serving.
