Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups powdered sugar (for decoration)
  • 2-3 tbsp milk (for decoration)
  • Food coloring (pastel colors, for decoration)
  • Sprinkles or edible decorations (for decoration)

Instructions:

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, cream softened butter and sugar until light and fluffy.
  3. Beat in egg and vanilla until well combined.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Divide dough into two discs, wrap, and chill for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Roll out the chilled dough on a floured surface to about ¼ inch thickness.
  8. Cut out cookie shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges just begin to turn golden.
  10. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring to a cooling rack.
  11. In a bowl, mix powdered sugar with milk until the desired consistency is achieved for icing.
  12. Divide into portions and add food coloring if desired.
  13. Decorate cookies with icing and sprinkles as desired.
