Ingredients:

  • 4 (6-ounce) California corbina fillets
  • 2 tablespoons olive oil (30 ml)
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt (5 g)
  • ½ teaspoon freshly ground black pepper (2 g)
  • ¼ cup fresh parsley, chopped (15 g)
  • ¼ cup fresh cilantro, chopped (15 g)
  • 2 tablespoons fresh dill, chopped (10 g)
  • 1 tablespoon fresh thyme leaves (3 g)
  • 1 teaspoon red pepper flakes (5 g) (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Pat the corbina fillets dry with paper towels and place fillets in a baking dish.
  3. In a mixing bowl, combine olive oil, lemon zest and juice, garlic, salt, and pepper. Fold in chopped herbs.
  4. Pour the herb mixture over the fillets, ensuring they are well coated.
  5. Bake in the preheated oven for 25-30 minutes until the fish is opaque and flakes easily with a fork.
  6. Remove from oven and let rest for a few minutes before serving.
