Ingredients:
- 1.5 lbs ground beef (80/20 blend)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1 large egg, beaten
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup ketchup
- 1 tbsp brown sugar
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, and beaten egg. Add chopped onion, minced garlic, salt, pepper, oregano, and smoked paprika. Mix until just combined.
- In a separate bowl, mix together the shredded cheddar cheese and softened cream cheese until well blended.
- On a sheet of plastic wrap, form half of the meat mixture into a rectangular shape. Spoon the cheese mixture onto the center and fold the meat over to encase the cheese. Shape into a loaf.
- Transfer the meatloaf to a lightly greased baking dish or loaf pan.
- In a small bowl, combine ketchup and brown sugar. Spread this mixture evenly over the top of the meatloaf.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C). If desired, let rest for 10 minutes before slicing.
