Ingredients:

  • 1.5 lbs ground beef (80/20 blend)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 large egg, beaten
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup ketchup
  • 1 tbsp brown sugar

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, and beaten egg. Add chopped onion, minced garlic, salt, pepper, oregano, and smoked paprika. Mix until just combined.
  3. In a separate bowl, mix together the shredded cheddar cheese and softened cream cheese until well blended.
  4. On a sheet of plastic wrap, form half of the meat mixture into a rectangular shape. Spoon the cheese mixture onto the center and fold the meat over to encase the cheese. Shape into a loaf.
  5. Transfer the meatloaf to a lightly greased baking dish or loaf pan.
  6. In a small bowl, combine ketchup and brown sugar. Spread this mixture evenly over the top of the meatloaf.
  7. Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C). If desired, let rest for 10 minutes before slicing.
