Ingredients:

  • 2 lbs russet potatoes, peeled and diced
  • 1 lb smoked sausage, sliced (e.g., Andouille or Kielbasa)
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened, about 5 minutes.
  3. Add sliced smoked sausage to the skillet. Sauté until browned, about 5-7 minutes.
  4. In a large mixing bowl, combine diced potatoes, garlic, sautéed sausage and onion, heavy cream, smoked paprika, salt, and pepper.
  5. Transfer the potato mixture to a greased baking dish. Sprinkle cheddar and mozzarella cheese evenly on top.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until cheese is bubbly and golden brown.
  7. Allow to cool for a few minutes before serving.
