Ingredients:
- 2 lbs russet potatoes, peeled and diced
- 1 lb smoked sausage, sliced (e.g., Andouille or Kielbasa)
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 teaspoon smoked paprika (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened, about 5 minutes.
- Add sliced smoked sausage to the skillet. Sauté until browned, about 5-7 minutes.
- In a large mixing bowl, combine diced potatoes, garlic, sautéed sausage and onion, heavy cream, smoked paprika, salt, and pepper.
- Transfer the potato mixture to a greased baking dish. Sprinkle cheddar and mozzarella cheese evenly on top.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until cheese is bubbly and golden brown.
- Allow to cool for a few minutes before serving.
