Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¾ cup (165g) packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¼ cups (281g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips
  • 16 oz (450g) cream cheese, softened
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the baking pan or line it with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add to the butter mixture, mixing until just combined.
  5. Fold in chocolate chips and spread the mixture evenly in the prepared baking pan.
  6. In a mixing bowl, beat cream cheese until smooth, then add granulated sugar and mix until creamy.
  7. Add eggs one at a time, then stir in vanilla and flour until just combined.
  8. Pour the cheesecake layer over the cookie base and gently spread to cover.
  9. Bake in preheated oven for 30-34 minutes or until the cheesecake is set and the edges are lightly golden.
  10. Let cool at room temperature for about 15 minutes, then refrigerate for at least 2 hours before slicing into bars.
