Ingredients:
- 1 cup (226g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ¾ cup (165g) packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 ¼ cups (281g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (175g) semi-sweet chocolate chips
- 16 oz (450g) cream cheese, softened
- ½ cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
Instructions:
- Preheat the oven to 350°F (175°C) and grease the baking pan or line it with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
- In another bowl, whisk together flour, baking soda, and salt; gradually add to the butter mixture, mixing until just combined.
- Fold in chocolate chips and spread the mixture evenly in the prepared baking pan.
- In a mixing bowl, beat cream cheese until smooth, then add granulated sugar and mix until creamy.
- Add eggs one at a time, then stir in vanilla and flour until just combined.
- Pour the cheesecake layer over the cookie base and gently spread to cover.
- Bake in preheated oven for 30-34 minutes or until the cheesecake is set and the edges are lightly golden.
- Let cool at room temperature for about 15 minutes, then refrigerate for at least 2 hours before slicing into bars.
