Ingredients:
- 4 bone-in chicken thighs (about 1.5 lbs / 680 g)
- 1 cup (240 ml) ranch dressing (store-bought or homemade)
- 1 cup (100 g) breadcrumbs (panko or regular)
- ½ cup (50 g) grated Parmesan cheese
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) onion powder
- ½ teaspoon (2 g) black pepper
- ½ teaspoon (2 g) smoked paprika
- ½ teaspoon (2 g) salt (adjust to taste)
- 2 tablespoons (30 ml) olive oil (for drizzling)
Instructions:
- Preheat the oven to 400°F (200°C).
- Pat chicken thighs dry with paper towels to remove excess moisture. Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
- In a bowl, combine breadcrumbs and grated Parmesan cheese. Toss well. In a separate bowl, pour the ranch dressing.
- Dip each chicken thigh in the ranch dressing
- Place the coated chicken thighs in a greased baking dish, skin-side up. Drizzle olive oil over the top for added crispiness.
- Bake the chicken in the preheated oven for 30-40 minutes, or until the internal temperature reaches 165°F (75°C) and the coating is golden brown.
- Remove from the oven and allow to rest for 5 minutes before serving.
