Ingredients:

  • 4 bone-in chicken thighs (about 1.5 lbs / 680 g)
  • 1 cup (240 ml) ranch dressing (store-bought or homemade)
  • 1 cup (100 g) breadcrumbs (panko or regular)
  • ½ cup (50 g) grated Parmesan cheese
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • ½ teaspoon (2 g) black pepper
  • ½ teaspoon (2 g) smoked paprika
  • ½ teaspoon (2 g) salt (adjust to taste)
  • 2 tablespoons (30 ml) olive oil (for drizzling)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels to remove excess moisture. Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. In a bowl, combine breadcrumbs and grated Parmesan cheese. Toss well. In a separate bowl, pour the ranch dressing.
  4. Dip each chicken thigh in the ranch dressing
  5. Place the coated chicken thighs in a greased baking dish, skin-side up. Drizzle olive oil over the top for added crispiness.
  6. Bake the chicken in the preheated oven for 30-40 minutes, or until the internal temperature reaches 165°F (75°C) and the coating is golden brown.
  7. Remove from the oven and allow to rest for 5 minutes before serving.
