Ingredients:

  • 1 cup (200g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) chocolate chips
  • 1/2 cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions:

  1. Preheat the Oven: Set your oven to 350°F (175°C) and prepare the baking pan by greasing it or lining it with parchment paper.
  2. Prepare the Cookie Dough: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar. Beat in the eggs one at a time, then add the vanilla extract. Gradually mix in flour, baking soda, and salt until just combined. Fold in the chocolate chips.
  3. Prepare the Brownie Layer: Melt the butter in a saucepan over low heat. Remove from heat, then stir in sugar, eggs, and vanilla. Add cocoa powder, flour, salt, and baking powder until combined.
  4. Layer the Mixtures: Spread half of the cookie dough into the bottom of the prepared pan. Pour the brownie batter over the cookie layer, smoothing it out. Drop spoonfuls of the remaining cookie dough over the brownie layer.
  5. Bake: Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with only a few moist crumbs.
  6. Cool and Serve: Allow the crookies to cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely before slicing.
