Ingredients:
- 1 ¼ cups (150g) all-purpose flour
- ½ cup (113g) unsalted butter, cold and cubed
- 3 tablespoons (37g) granulated sugar
- 1/4 teaspoon salt
- 1/4 cup (60ml) cold water
- 2 cups (300g) fresh or frozen goumi berries, rinsed
- ½ cup (100g) granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) heavy cream
- 2 large eggs
Instructions:
- Combine flour, sugar, and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add cold water gradually until dough forms.
- Chill in the refrigerator for 15 minutes.
- Preheat the oven to 375°F (190°C).
- In a bowl, combine goumi berries, sugar, and cornstarch.
- Gently fold in vanilla extract and set aside.
- Roll out the chilled dough on a floured surface to fit the pie dish.
- Place the dough into the pie dish, trimming any excess.
- Pour the goumi filling into the prepared crust.
- In a separate bowl, whisk together heavy cream and eggs; pour over the goumi berries.
- Cover edges with parchment paper or foil to prevent burning.
- Bake for 30 minutes, or until the filling is set and the crust is golden brown.
- Allow the pie to cool for at least 10-15 minutes before slicing.
- Serve warm or at room temperature.
