Ingredients:
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- Granulated sugar for rolling
- Royal icing or colored sprinkles (for decorating, optional)
Instructions:
- Line baking sheets with parchment paper or silicone mats.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract to the butter-sugar mixture. Mix until well combined.
- Gradually add the dry ingredients to the wet mix, blending until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Remove the dough from the fridge, roll it out on a floured surface, and cut out shapes with cookie cutters.
- Place cutouts on prepared baking sheets. Sprinkle with sugar if desired. Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool on wire racks before decorating with royal icing or sprinkles.
