Ingredients:

  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • Granulated sugar for rolling
  • Royal icing or colored sprinkles (for decorating, optional)

Instructions:

  1. Line baking sheets with parchment paper or silicone mats.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract to the butter-sugar mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mix, blending until a dough forms.
  6. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat the oven to 350°F (175°C). Remove the dough from the fridge, roll it out on a floured surface, and cut out shapes with cookie cutters.
  8. Place cutouts on prepared baking sheets. Sprinkle with sugar if desired. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on wire racks before decorating with royal icing or sprinkles.
