Ingredients:
- 4 large bone-in, skin-on chicken thighs (about 1.5 lbs / 680 g)
- Salt and pepper, to taste
- 2 tablespoons olive oil (30 mL)
- 4 cloves garlic, minced
- 1 cup (240 mL) heavy cream
- 1 cup (100 g) freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning (5 g)
- 1 tablespoon chopped fresh parsley, for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken, skin-side down, for about 5-7 minutes until golden brown.
- Remove chicken and set aside. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and stir to combine. Add Parmesan cheese and Italian seasoning, whisking until smooth and creamy.
- Return the chicken to the skillet, spooning some of the sauce over the top. Bake uncovered for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Garnish with chopped parsley and serve hot.
