Ingredients:

  • 4 large bone-in, skin-on chicken thighs (about 1.5 lbs / 680 g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (30 mL)
  • 4 cloves garlic, minced
  • 1 cup (240 mL) heavy cream
  • 1 cup (100 g) freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (5 g)
  • 1 tablespoon chopped fresh parsley, for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken, skin-side down, for about 5-7 minutes until golden brown.
  4. Remove chicken and set aside. In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Pour in heavy cream and stir to combine. Add Parmesan cheese and Italian seasoning, whisking until smooth and creamy.
  6. Return the chicken to the skillet, spooning some of the sauce over the top. Bake uncovered for 30-35 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Garnish with chopped parsley and serve hot.
