Ingredients:

  • 1 pound (450g) Italian sausage links (mild or spicy, based on preference)
  • 1 tablespoon olive oil
  • 1 medium onion, sliced into rings
  • 1 bell pepper (any color), sliced into strips
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional, for extra heat)
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). This temperature will ensure even cooking and a nice caramelization on the sausages.
  2. In a large mixing bowl, combine the sliced onion, bell pepper, and minced garlic. Drizzle with olive oil and sprinkle with oregano, red pepper flakes (if using), salt, and black pepper. Toss until all vegetables are well-coated.
  3. On a large baking sheet lined with parchment paper or aluminum foil for easy cleanup, arrange the Italian sausage links in the center of the sheet. Surround them with the seasoned vegetable mixture.
  4. Place the baking sheet in the preheated oven and roast for about 30–35 minutes. Flip the sausage links halfway through cooking to ensure they brown evenly.
  5. The sausages are done when they reach an internal temperature of at least 160°F (70°C) and have a golden-brown exterior. The vegetables should be tender and slightly caramelized.
  6. Remove from oven; let rest for a few minutes before serving. Garnish with freshly chopped parsley if desired.
