Ingredients:

  • 1 pound kielbasa sausage, sliced
  • 3 cups frozen hash browns or diced potatoes
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ cup breadcrumbs (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil. Add sliced kielbasa and cook until browned, about 5-7 minutes.
  3. Add diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.
  4. In a mixing bowl, combine heavy cream, chicken broth, paprika, salt, and pepper. Stir in the hash browns and half of the cheddar cheese.
  5. Add the cooked kielbasa and sautéed vegetables to the hash brown mixture. Stir until well combined.
  6. Pour the mixture into a greased 9x13 inch baking dish. Spread evenly.
  7. Top with the remaining cheddar cheese and breadcrumbs (if using).
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
  9. Allow the casserole to cool for 5 minutes before serving. Garnish with fresh parsley if desired.
