Ingredients:
- 1 pound kielbasa sausage, sliced
- 3 cups frozen hash browns or diced potatoes
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 1 cup chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- ½ cup breadcrumbs (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil. Add sliced kielbasa and cook until browned, about 5-7 minutes.
- Add diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 3-4 minutes.
- In a mixing bowl, combine heavy cream, chicken broth, paprika, salt, and pepper. Stir in the hash browns and half of the cheddar cheese.
- Add the cooked kielbasa and sautéed vegetables to the hash brown mixture. Stir until well combined.
- Pour the mixture into a greased 9x13 inch baking dish. Spread evenly.
- Top with the remaining cheddar cheese and breadcrumbs (if using).
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
- Allow the casserole to cool for 5 minutes before serving. Garnish with fresh parsley if desired.
