Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup (120ml) milk
  • 2 tablespoons (30g) unsalted butter, melted
  • 6 ounces (170g) fresh mozzarella cheese, cut into 12 small cubes
  • 1 tablespoon fresh basil, chopped (or 1 teaspoon dried)
  • 1/4 cup (30g) grated Parmesan cheese
  • 1 tablespoon olive oil
  • Optional: crushed red pepper flakes for a kick

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine flour, baking powder, salt, and garlic powder.
  3. In a separate bowl, whisk together milk and melted butter.
  4. Pour the wet ingredients into the dry mixture. Stir until just combined; do not overmix.
  5. Transfer the dough onto a lightly floured surface and divide it into 12 equal portions.
  6. Place a cube of mozzarella and a pinch of basil in the center of each dough portion.
  7. Enclose the cheese by folding the dough over it and rolling into a ball shape.
  8. Place cheese bombs on a parchment-lined baking sheet.
  9. Lightly brush each bomb with olive oil and sprinkle with Parmesan and optional crushed red pepper flakes.
  10. Bake for 10 minutes until golden brown and cheese is melted.
