Ingredients:
- 2 cups dried navy beans, soaked overnight
- 3 cups water
- 1 medium onion, chopped
- 1 teaspoon mustard powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/2 cup unsulfured molasses
- 1/4 cup packed brown sugar
- 1/4 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
Instructions:
- Soak navy beans in water overnight and drain.
- In a large pot, cover soaked beans with fresh water and bring to a boil.
- Boil for 10 minutes, then reduce heat and simmer for 1 hour. Drain and set aside.
- In a medium saucepan, combine molasses, brown sugar, vinegar, Worcestershire sauce, ginger, and cinnamon.
- Heat over medium heat, stirring until sugar dissolves and the sauce thickens slightly.
- In a 2-quart baking dish, combine cooked navy beans, chopped onion, mustard powder, smoked paprika, black pepper, and salt.
- Pour the molasses sauce over the beans and stir gently to combine.
- Cover the baking dish with aluminum foil.
- Bake in a preheated oven at 350°F (175°C) for 1 hour.
- Remove foil and bake for an additional 30 minutes until sauce is bubbly and beans are tender.
- Allow to cool slightly before serving. Enjoy warm as a hearty side.
