Ingredients:

  • 2 cups dried navy beans, soaked overnight
  • 3 cups water
  • 1 medium onion, chopped
  • 1 teaspoon mustard powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 cup unsulfured molasses
  • 1/4 cup packed brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Soak navy beans in water overnight and drain.
  2. In a large pot, cover soaked beans with fresh water and bring to a boil.
  3. Boil for 10 minutes, then reduce heat and simmer for 1 hour. Drain and set aside.
  4. In a medium saucepan, combine molasses, brown sugar, vinegar, Worcestershire sauce, ginger, and cinnamon.
  5. Heat over medium heat, stirring until sugar dissolves and the sauce thickens slightly.
  6. In a 2-quart baking dish, combine cooked navy beans, chopped onion, mustard powder, smoked paprika, black pepper, and salt.
  7. Pour the molasses sauce over the beans and stir gently to combine.
  8. Cover the baking dish with aluminum foil.
  9. Bake in a preheated oven at 350°F (175°C) for 1 hour.
  10. Remove foil and bake for an additional 30 minutes until sauce is bubbly and beans are tender.
  11. Allow to cool slightly before serving. Enjoy warm as a hearty side.
