Ingredients:
- 1 ½ cups (135g) rolled oats
- 1 cup (240ml) milk (dairy or plant-based)
- 1/2 cup (120ml) molasses
- 1/4 cup (60ml) vegetable oil or melted coconut oil
- 1 large egg
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon (optional for flavor depth)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a bowl, combine rolled oats and milk. Let sit for 10 minutes to absorb the liquid.
- In another bowl, whisk together molasses, oil, and egg until smooth.
- Fold the wet mixture into the soaked oats, mixing until well-combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet, mixing until just combined (do not overmix).
- Pour the batter into a greased loaf pan, smoothing the top with a spatula.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean and the bread is golden brown.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
