  • 1 cup (240ml) milk (dairy or plant-based)
  • 1/2 cup (120ml) molasses
  • 1/4 cup (60ml) vegetable oil or melted coconut oil
  • 1 large egg
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon (optional for flavor depth)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine rolled oats and milk. Let sit for 10 minutes to absorb the liquid.
  3. In another bowl, whisk together molasses, oil, and egg until smooth.
  4. Fold the wet mixture into the soaked oats, mixing until well-combined.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually fold the dry ingredients into the wet, mixing until just combined (do not overmix).
  7. Pour the batter into a greased loaf pan, smoothing the top with a spatula.
  8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean and the bread is golden brown.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
