Ingredients:

  • 24 Oreo cookies, crushed (about 300g)
  • 5 tablespoons unsalted butter, melted (70g)
  • 16 ounces cream cheese, softened (450g)
  • 2/3 cup granulated sugar (135g)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 12 Oreo cookies, chopped (about 150g)
  • 1/4 cup chocolate chips (about 45g)
  • Additional crushed Oreos

Instructions:

  1. Preheat the oven to 350°F (175°C) and line the baking pan with parchment paper, leaving overhang to lift the bars out later.
  2. In a bowl, combine crushed Oreos and melted butter, then press the mixture evenly into the bottom of the prepared pan.
  3. In a mixing bowl, beat the cream cheese until smooth; add sugar and vanilla, mixing until combined; blend in eggs one at a time, scraping the sides of the bowl as needed; fold in the chopped Oreos gently.
  4. Pour the cheesecake filling over the crust, smoothing the top; optional: sprinkle additional Oreos on top.
  5. Bake in the preheated oven for about 10 minutes until set but still slightly jiggly.
  6. Remove from the oven and let cool at room temperature for 15 minutes; transfer to the refrigerator to chill for at least 30 minutes.
  7. Lift the bars from the pan using the parchment overhang, cut into squares, and serve with a chocolate drizzle if desired.
