Ingredients:
- 24 Oreo cookies, crushed (about 300g)
- 5 tablespoons unsalted butter, melted (70g)
- 16 ounces cream cheese, softened (450g)
- 2/3 cup granulated sugar (135g)
- 1 teaspoon vanilla extract
- 2 large eggs
- 12 Oreo cookies, chopped (about 150g)
- 1/4 cup chocolate chips (about 45g)
- Additional crushed Oreos
Instructions:
- Preheat the oven to 350°F (175°C) and line the baking pan with parchment paper, leaving overhang to lift the bars out later.
- In a bowl, combine crushed Oreos and melted butter, then press the mixture evenly into the bottom of the prepared pan.
- In a mixing bowl, beat the cream cheese until smooth; add sugar and vanilla, mixing until combined; blend in eggs one at a time, scraping the sides of the bowl as needed; fold in the chopped Oreos gently.
- Pour the cheesecake filling over the crust, smoothing the top; optional: sprinkle additional Oreos on top.
- Bake in the preheated oven for about 10 minutes until set but still slightly jiggly.
- Remove from the oven and let cool at room temperature for 15 minutes; transfer to the refrigerator to chill for at least 30 minutes.
- Lift the bars from the pan using the parchment overhang, cut into squares, and serve with a chocolate drizzle if desired.
