Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 large egg
  • 1/4 cup cold water
  • 3/4 cup sweet jelly or fruit preserves (e.g., raspberry, apricot, or strawberry)
  • 1 egg, beaten (for egg wash)
  • Powdered sugar (for dusting)

Instructions:

  1. In a mixing bowl, combine flour, sugar, and salt.
  2. Add chilled, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Stir in the egg until just combined.
  4. Gradually add cold water until the dough comes together.
  5. Form the dough into a ball, flatten slightly, wrap in plastic, and refrigerate for 30 minutes.
  6. Set the oven to 375°F (190°C).
  7. On a floured surface, roll out the chilled dough to about 1/4-inch thickness.
  8. Use a round cookie cutter to cut out circles of dough.
  9. Cut out the center of each circle with a smaller cutter to form rings.
  10. Place filling in the center of half the rings and top with the other half; seal with egg wash if desired.
  11. Place rings on a baking sheet lined with parchment.
  12. Brush with beaten egg.
  13. Bake for 20-25 minutes, or until golden brown.
  14. Allow pastries to cool on a rack.
  15. Dust with powdered sugar before serving.
