- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 1 large egg
- 1/4 cup cold water
- 3/4 cup sweet jelly or fruit preserves (e.g., raspberry, apricot, or strawberry)
- 1 egg, beaten (for egg wash)
- Powdered sugar (for dusting)
Instructions:
- In a mixing bowl, combine flour, sugar, and salt.
- Add chilled, cubed butter and mix until the mixture resembles coarse crumbs.
- Stir in the egg until just combined.
- Gradually add cold water until the dough comes together.
- Form the dough into a ball, flatten slightly, wrap in plastic, and refrigerate for 30 minutes.
- Set the oven to 375°F (190°C).
- On a floured surface, roll out the chilled dough to about 1/4-inch thickness.
- Use a round cookie cutter to cut out circles of dough.
- Cut out the center of each circle with a smaller cutter to form rings.
- Place filling in the center of half the rings and top with the other half; seal with egg wash if desired.
- Place rings on a baking sheet lined with parchment.
- Brush with beaten egg.
- Bake for 20-25 minutes, or until golden brown.
- Allow pastries to cool on a rack.
- Dust with powdered sugar before serving.
