Ingredients:

  • 2 ¾ cups (345 g) all-purpose flour
  • 1 tsp (5 g) baking powder
  • ½ tsp (3 g) baking soda
  • ½ tsp (3 g) salt
  • 1 cup (227 g) unsalted butter, room temperature
  • 1 ½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 tsp (5 ml) vanilla extract
  • ½ tsp (2 ml) almond extract (optional)
  • Royal icing or colored sprinkles in spooky designs (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a separate bowl, cream together butter and granulated sugar until light and fluffy (about 2-3 minutes).
  5. Beat in the egg, vanilla extract, and almond extract (if using) until fully combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Cover the dough with plastic wrap and refrigerate for about 10 minutes.
  8. On a floured surface, roll out the dough to about ¼ inch thickness. Use cookie cutters to cut out spooky shapes.
  9. Place cutouts on prepared baking sheets, and bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow cookies to cool slightly before transferring to a wire rack. Decorate with icing or sprinkles as desired.
