Ingredients:

  • 1 cup mashed sweet potato (about 1 medium sweet potato)
  • 1/2 cup miso paste (preferably white miso)
  • 1/3 cup vegetable oil or melted coconut oil
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon or nutmeg (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line the loaf pan with parchment paper or grease lightly.
  2. Roast sweet potatoes until tender or microwave, and then mash them.
  3. In a large bowl, combine the mashed sweet potato, miso paste, oil, sugar, eggs, and vanilla. Whisk until smooth and well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and spices if using.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  6. Transfer the batter to the prepared loaf pan, smoothing the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. The top should be golden brown.
  8. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
