Ingredients:
- 1 cup mashed sweet potato (about 1 medium sweet potato)
- 1/2 cup miso paste (preferably white miso)
- 1/3 cup vegetable oil or melted coconut oil
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon or nutmeg (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Line the loaf pan with parchment paper or grease lightly.
- Roast sweet potatoes until tender or microwave, and then mash them.
- In a large bowl, combine the mashed sweet potato, miso paste, oil, sugar, eggs, and vanilla. Whisk until smooth and well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, and spices if using.
- Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Transfer the batter to the prepared loaf pan, smoothing the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. The top should be golden brown.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
