Ingredients:

  • 1 ½ cups (175g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups (150g) finely grated zucchini
  • ½ cup (75g) chopped walnuts or pecans (optional)
  • ½ cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan or line it with parchment paper.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, beat the sugar, oil, eggs, and vanilla until combined.
  5. Fold the grated zucchini into the wet ingredients until fully blended.
  6. Gradually add the dry ingredients to the zucchini mixture, stirring just until combined. Do not overmix.
  7. Gently fold in nuts or chocolate chips, if using.
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  9. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
