Ingredients:
- 1 ½ cups (175g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- 1 cup (200g) granulated sugar
- ½ cup (120ml) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups (150g) finely grated zucchini
- ½ cup (75g) chopped walnuts or pecans (optional)
- ½ cup (90g) chocolate chips (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the loaf pan or line it with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat the sugar, oil, eggs, and vanilla until combined.
- Fold the grated zucchini into the wet ingredients until fully blended.
- Gradually add the dry ingredients to the zucchini mixture, stirring just until combined. Do not overmix.
- Gently fold in nuts or chocolate chips, if using.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
