Ingredients:
- 1½ lb boneless skinless chicken breast, cut into 1-inch cubes
- 4 cups fresh broccoli florets, bite-sized
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp grated Parmesan cheese
Instructions:
- Preheat the oven to 400°F (200°C).
- In an extra-large mixing bowl, combine the cubed chicken and broccoli florets.
- Drizzle the 2 tbsp olive oil over the mixture and sprinkle in the 1 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp salt, and 1/4 tsp black pepper.
- Toss thoroughly until all chicken and broccoli are evenly coated in oil and spices.
- Spread the mixture in a single layer on a large rimmed baking sheet, ensuring pieces do not overcrowd to prevent steaming.
- Bake for 25 to 30 minutes, using tongs to flip the chicken and toss the broccoli halfway through for uniform browning.
- Remove from the oven once the broccoli has charred, chestnut brown tips and the chicken reaches a safe internal temperature of 165°F (74°C).
- While still sizzling, drizzle 1 tbsp fresh lemon juice over the pan and sprinkle with 2 tbsp grated Parmesan cheese.
