Ingredients:
- 2 lbs yellow onions, thinly sliced
- 3 tbsp unsalted butter
- 1 tsp salt
- 1 tbsp olive oil
- 8 oz cream cheese, softened to room temperature
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 1/2 cups Gruyère cheese, shredded
- 1/2 cup Swiss cheese, shredded
- 1 tsp fresh thyme leaves
Instructions:
- Melt the butter and olive oil in a large skillet over medium-low heat. Add the sliced onions and salt. Cook, stirring occasionally, for 25–30 minutes until the onions are mahogany-colored and jammy.
- In a medium mixing bowl, beat the softened cream cheese, sour cream, garlic powder, and pepper until smooth.
- Remove the skillet of caramelized onions from heat and fold in the cream cheese mixture until completely incorporated.
- Preheat the oven to 375°F (190°C). Spread the onion mixture evenly in the skillet.
- Top the mixture with shredded Gruyère and Swiss cheese.
- Bake for 15–20 minutes, or until the cheese is bubbly and golden-brown.
- Garnish with fresh thyme leaves immediately after removing from the oven.
