Ingredients:

  • 2 lbs yellow onions, thinly sliced
  • 3 tbsp unsalted butter
  • 1 tsp salt
  • 1 tbsp olive oil
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 1/2 cups Gruyère cheese, shredded
  • 1/2 cup Swiss cheese, shredded
  • 1 tsp fresh thyme leaves

Instructions:

  1. Melt the butter and olive oil in a large skillet over medium-low heat. Add the sliced onions and salt. Cook, stirring occasionally, for 25–30 minutes until the onions are mahogany-colored and jammy.
  2. In a medium mixing bowl, beat the softened cream cheese, sour cream, garlic powder, and pepper until smooth.
  3. Remove the skillet of caramelized onions from heat and fold in the cream cheese mixture until completely incorporated.
  4. Preheat the oven to 375°F (190°C). Spread the onion mixture evenly in the skillet.
  5. Top the mixture with shredded Gruyère and Swiss cheese.
  6. Bake for 15–20 minutes, or until the cheese is bubbly and golden-brown.
  7. Garnish with fresh thyme leaves immediately after removing from the oven.
