Ingredients:
- 8 ounces (225g) cooked pasta (penne, rotini, or farfalle work well), preferably whole wheat
- 2 tablespoons (30ml) olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried Italian herbs
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup (30g) grated Parmesan cheese (optional, nutritional yeast for vegan)
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Ensure the cooked pasta is reasonably dry. If it's very wet, pat it dry with paper towels.
- In the large mixing bowl, toss the cooked pasta with olive oil, garlic powder, onion powder, Italian herbs, red pepper flakes (if using), Parmesan cheese (if using), salt, and pepper. Make sure the pasta is evenly coated.
- Spread the seasoned pasta in a single layer on the prepared baking sheet. Avoid overcrowding; bake in batches if necessary.
- Bake for 20-25 minutes, or until the pasta is golden brown and crispy, flipping halfway through baking time for even browning. Watch carefully to prevent burning!
- Remove from the oven and let the pasta chips cool slightly on the baking sheet before serving. They will crisp up further as they cool.
