Ingredients:
- 6 cups sliced fresh peaches (about 5-6 medium peaches, peeled, pitted, and sliced)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1/2 cup unsalted butter (cold and cut into small cubes)
- 1/2 cup old-fashioned oats
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a 9-inch square baking dish with butter.
- In a large bowl, combine the sliced peaches, 1/4 cup granulated sugar, 1 tablespoon lemon juice, 1/2 teaspoon ground cinnamon, and 1 tablespoon cornstarch. Toss gently until evenly coated and transfer to the baking dish.
- In another bowl, mix 1 cup all-purpose flour, 1/3 cup granulated sugar, 1/3 cup packed light brown sugar, 1/2 cup cold cubed butter, 1/2 cup old-fashioned oats, 1/4 teaspoon salt, and 1/4 teaspoon ground cinnamon. Work the butter into the dry ingredients until the mixture resembles coarse crumbs with some larger bits.
- Evenly sprinkle the crumble topping over the peach filling. Bake in the preheated oven for 40 minutes or until the topping is golden brown and the peach filling is bubbling around the edges.
- Remove from oven and let cool for about 10 minutes before serving. Enjoy warm on its own or with vanilla ice cream, whipped cream, or Greek yogurt.
