Ingredients:
- 6 cups peach slices (about 5-6 fresh, ripe peaches – peeled, pitted, and sliced into 1/2-inch pieces)
- 1/3 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon all-purpose flour
- 1 cup all-purpose flour
- 1/2 cup old-fashioned rolled oats
- 1/2 cup light brown sugar (packed)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (cold, cut into 1/2-inch cubes)
- Optional: Vanilla ice cream or whipped cream for serving
Instructions:
- Preheat your oven to 375°F (190°C) and lightly grease a 9-inch baking dish or an 8×8-inch square pan.
- In a large bowl, combine the peach slices, granulated sugar, lemon juice, vanilla extract, cinnamon, and 1 tablespoon of flour. Toss until the peaches are evenly coated, then transfer the mixture to the prepared baking dish.
- In another bowl, combine 1 cup all-purpose flour, rolled oats, brown sugar, 1/2 teaspoon cinnamon, and salt. Add the cold butter cubes and work into the dry ingredients using a pastry cutter or your fingers until the mixture forms coarse crumbs.
- Evenly sprinkle the crumble topping over the peach filling. Place the dish in the preheated oven and bake for about 40 minutes, or until the topping is golden brown and the filling is bubbling.
- Remove from the oven and let the crumble cool for about 10 minutes before serving. Enjoy warm on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
