Ingredients:

  • 1.5 cups steel cut oats (255g)
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon sea salt
  • 3 cups whole milk (710ml)
  • 0.33 cup maple syrup (80ml)
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 2 tablespoons unsalted butter, melted (30g)
  • 2 medium apples, diced
  • 0.5 cup chopped walnuts (60g)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9x9 inch square baking dish thoroughly with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the steel cut oats, cinnamon, baking powder, and sea salt until evenly distributed.
  3. In a separate medium bowl, beat the eggs then whisk in the milk, maple syrup, vanilla extract, and melted butter until the mixture is uniform.
  4. Spread the diced apples and chopped walnuts across the bottom of the prepared baking dish. Pour the dry oat mixture evenly over the fruit and nuts.
  5. Gently pour the liquid mixture over the oats. Use a spoon to lightly press down any floating oats to ensure they are fully submerged.
  6. Bake for 45–55 minutes until the top is golden brown and the center is set but retains a slight jiggle.
  7. Remove from the oven and let rest for at least 10 minutes to allow the oats to fully absorb the remaining moisture for a sliceable texture.
