Ingredients:
- 1.5 cups steel cut oats (255g)
- 1.5 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 0.5 teaspoon sea salt
- 3 cups whole milk (710ml)
- 0.33 cup maple syrup (80ml)
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 2 tablespoons unsalted butter, melted (30g)
- 2 medium apples, diced
- 0.5 cup chopped walnuts (60g)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a 9x9 inch square baking dish thoroughly with butter or non-stick spray.
- In a large mixing bowl, whisk together the steel cut oats, cinnamon, baking powder, and sea salt until evenly distributed.
- In a separate medium bowl, beat the eggs then whisk in the milk, maple syrup, vanilla extract, and melted butter until the mixture is uniform.
- Spread the diced apples and chopped walnuts across the bottom of the prepared baking dish. Pour the dry oat mixture evenly over the fruit and nuts.
- Gently pour the liquid mixture over the oats. Use a spoon to lightly press down any floating oats to ensure they are fully submerged.
- Bake for 45–55 minutes until the top is golden brown and the center is set but retains a slight jiggle.
- Remove from the oven and let rest for at least 10 minutes to allow the oats to fully absorb the remaining moisture for a sliceable texture.
