Ingredients:

  • 2 large yellow onions, thinly sliced (approx. 300g)
  • 1 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup plain Greek yogurt (0% or 2% fat)
  • 1 tsp garlic powder
  • 1 tbsp fresh lemon juice
  • 1/4 tsp onion powder

Instructions:

  1. Heat the olive oil in a large heavy-bottomed skillet over medium-high heat.
  2. Add the sliced onions and salt, stirring frequently for 5-7 minutes until they soften.
  3. Pour in the balsamic vinegar and lower heat to medium; cook for another 10 minutes until the onions are jammy and concentrated.
  4. Remove onions from heat and allow them to cool completely.
  5. In a medium mixing bowl, whisk together the Greek yogurt, garlic powder, lemon juice, onion powder, and black pepper until smooth.
  6. Gently fold the cooled balsamic onions into the yogurt base using a spatula.
  7. Transfer to a serving bowl and refrigerate for at least 30 minutes to allow flavors to meld.
