Ingredients:
- 2 large yellow onions, thinly sliced (approx. 300g)
- 1 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup plain Greek yogurt (0% or 2% fat)
- 1 tsp garlic powder
- 1 tbsp fresh lemon juice
- 1/4 tsp onion powder
Instructions:
- Heat the olive oil in a large heavy-bottomed skillet over medium-high heat.
- Add the sliced onions and salt, stirring frequently for 5-7 minutes until they soften.
- Pour in the balsamic vinegar and lower heat to medium; cook for another 10 minutes until the onions are jammy and concentrated.
- Remove onions from heat and allow them to cool completely.
- In a medium mixing bowl, whisk together the Greek yogurt, garlic powder, lemon juice, onion powder, and black pepper until smooth.
- Gently fold the cooled balsamic onions into the yogurt base using a spatula.
- Transfer to a serving bowl and refrigerate for at least 30 minutes to allow flavors to meld.
