Ingredients:

  • 3 ripe bananas, mashed (approx. 360g)
  • 2 large eggs, lightly beaten (approx. 100g)
  • 1/2 cup milk (any kind – dairy or non-dairy), (120ml)
  • 1/4 cup maple syrup (60ml)
  • 2 tablespoons melted unsalted butter (30g) (or coconut oil for dairy-free)
  • 1 teaspoon vanilla extract (5ml)
  • 3 cups rolled oats (not instant) (240g)
  • 1 teaspoon baking powder (5g)
  • 1/2 teaspoon ground cinnamon (2g)
  • 1/4 teaspoon ground nutmeg (1g)
  • 1/4 teaspoon salt (1g)
  • 1/2 cup chopped walnuts or pecans (60g) (optional)
  • 1/4 cup chocolate chips (30g) (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.
  3. Add the eggs, milk, maple syrup, melted butter (or oil), and vanilla extract to the mashed bananas. Whisk until well combined.
  4. In the same bowl, add the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir until the dry ingredients are evenly distributed.
  5. If using, stir in the chopped nuts or chocolate chips.
  6. Pour the oatmeal mixture into the prepared baking dish and spread evenly.
  7. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool slightly before serving.
