Ingredients:
- 3 ripe bananas, mashed (approx. 360g)
- 2 large eggs, lightly beaten (approx. 100g)
- 1/2 cup milk (any kind – dairy or non-dairy), (120ml)
- 1/4 cup maple syrup (60ml)
- 2 tablespoons melted unsalted butter (30g) (or coconut oil for dairy-free)
- 1 teaspoon vanilla extract (5ml)
- 3 cups rolled oats (not instant) (240g)
- 1 teaspoon baking powder (5g)
- 1/2 teaspoon ground cinnamon (2g)
- 1/4 teaspoon ground nutmeg (1g)
- 1/4 teaspoon salt (1g)
- 1/2 cup chopped walnuts or pecans (60g) (optional)
- 1/4 cup chocolate chips (30g) (optional)
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.
- Add the eggs, milk, maple syrup, melted butter (or oil), and vanilla extract to the mashed bananas. Whisk until well combined.
- In the same bowl, add the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir until the dry ingredients are evenly distributed.
- If using, stir in the chopped nuts or chocolate chips.
- Pour the oatmeal mixture into the prepared baking dish and spread evenly.
- Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
