Ingredients:

  • 450 g cubed banana bread
  • 150 g ripe bananas, sliced into rounds
  • 480 ml whole milk
  • 240 ml heavy cream
  • 3 large eggs
  • 150 g granulated sugar
  • 5 ml vanilla extract
  • 2 g ground cinnamon
  • 1.5 g salt
  • 28 g unsalted butter, melted
  • 25 g brown sugar

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease a 9x13 inch baking dish with butter or cooking spray.
  2. Arrange the 450 g cubed banana bread and 150 g sliced bananas evenly in the baking dish, ensuring there are no large gaps.
  3. In a large bowl, whisk together 3 large eggs and 150 g granulated sugar until the mixture is pale.
  4. Stir in 480 ml whole milk, 240 ml heavy cream, 5 ml vanilla extract, 2 g ground cinnamon, and 1.5 g salt until smooth.
  5. Pour the custard evenly over the bread and press down lightly with a spatula to ensure every piece is submerged. Let the dish rest for 15 minutes.
  6. Drizzle 28 g melted unsalted butter over the top and sprinkle with 25 g brown sugar.
  7. Bake for 40–45 minutes until the top is a deep golden brown and the center is set, reaching an internal temperature of 160°F (71°C).
