Ingredients:
- 340g overripe bananas, mashed (approx. 1 ½ cups)
- 180ml vegetable oil (¾ cup)
- 200g brown sugar, packed (1 cup)
- 2 large eggs, room temperature
- 10ml vanilla extract (2 tsp)
- 250g all-purpose flour (2 cups)
- 5g baking soda (1 tsp)
- 5g baking powder (1 tsp)
- 3g salt (½ tsp)
- 2g ground cinnamon (1 tsp)
- 115g toasted walnuts, chopped (1 cup)
- 225g cream cheese, softened (8 oz)
- 57g unsalted butter, softened (4 tbsp)
- 240g powdered sugar (2 cups)
- 5ml vanilla extract (1 tsp)
- 15ml heavy cream (1 tbsp)
Instructions:
- Preheat your oven to 350°F (175°C) and grease your pan.
- In a large bowl, cream together the oil and brown sugar until smooth. Beat in the eggs one at a time, followed by the vanilla and the mashed bananas.
- Sift the flour, baking soda, baking powder, salt, and cinnamon directly into the wet ingredients. Gently fold the mixture until just combined. Fold in the chopped walnuts.
- Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 30–35 minutes.
