Ingredients:

  • 340g overripe bananas, mashed (approx. 1 ½ cups)
  • 180ml vegetable oil (¾ cup)
  • 200g brown sugar, packed (1 cup)
  • 2 large eggs, room temperature
  • 10ml vanilla extract (2 tsp)
  • 250g all-purpose flour (2 cups)
  • 5g baking soda (1 tsp)
  • 5g baking powder (1 tsp)
  • 3g salt (½ tsp)
  • 2g ground cinnamon (1 tsp)
  • 115g toasted walnuts, chopped (1 cup)
  • 225g cream cheese, softened (8 oz)
  • 57g unsalted butter, softened (4 tbsp)
  • 240g powdered sugar (2 cups)
  • 5ml vanilla extract (1 tsp)
  • 15ml heavy cream (1 tbsp)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease your pan.
  2. In a large bowl, cream together the oil and brown sugar until smooth. Beat in the eggs one at a time, followed by the vanilla and the mashed bananas.
  3. Sift the flour, baking soda, baking powder, salt, and cinnamon directly into the wet ingredients. Gently fold the mixture until just combined. Fold in the chopped walnuts.
  4. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 30–35 minutes.
