Ingredients:
- 1 lb lean ground beef
- 1 tbsp taco seasoning
- 1 tbsp olive oil
- 16 oz processed melting cheese, cubed
- 1/2 cup whole milk
- 4 oz canned diced green chiles
- 1/2 tsp garlic powder
- 2 tbsp fresh cilantro, chopped
- 1 jalapeño, thinly sliced
- 1 tsp fresh lime juice
Instructions:
- Heat olive oil in a 10 inch cast iron skillet over medium high heat.
- Add ground beef and cook until fully crumbled and browned. Note: Don't stir too often; let it sear for a minute first.
- Stir in taco seasoning and cook for 1 minute until the spices smell toasted.
- Reduce heat to medium low. Note: This is the most important step to prevent the cheese from breaking.
- Stir in whole milk, cubed processed cheese, garlic powder, and diced green chiles.
- Stir continuously until the cheese is fully melted and the sauce is velvety and smooth.
- Remove the pan from the heat immediately.
- Stir in fresh lime juice. Note: Adding acid while boiling can sometimes alter the texture.
- Garnish with sliced jalapeños and chopped fresh cilantro.
- Serve immediately while molten.
