Ingredients:

  • 1 lb lean ground beef
  • 1 tbsp taco seasoning
  • 1 tbsp olive oil
  • 16 oz processed melting cheese, cubed
  • 1/2 cup whole milk
  • 4 oz canned diced green chiles
  • 1/2 tsp garlic powder
  • 2 tbsp fresh cilantro, chopped
  • 1 jalapeño, thinly sliced
  • 1 tsp fresh lime juice

Instructions:

  1. Heat olive oil in a 10 inch cast iron skillet over medium high heat.
  2. Add ground beef and cook until fully crumbled and browned. Note: Don't stir too often; let it sear for a minute first.
  3. Stir in taco seasoning and cook for 1 minute until the spices smell toasted.
  4. Reduce heat to medium low. Note: This is the most important step to prevent the cheese from breaking.
  5. Stir in whole milk, cubed processed cheese, garlic powder, and diced green chiles.
  6. Stir continuously until the cheese is fully melted and the sauce is velvety and smooth.
  7. Remove the pan from the heat immediately.
  8. Stir in fresh lime juice. Note: Adding acid while boiling can sometimes alter the texture.
  9. Garnish with sliced jalapeños and chopped fresh cilantro.
  10. Serve immediately while molten.
