Ingredients:
- 2 cups (250g) all-purpose flour
- 3 large eggs
- ¾ cup (180ml) whole milk
- ½ tsp (3g) salt
- 2 tbsp (28g) unsalted butter
- 1.5 lbs (680g) beef sirloin, thinly sliced against the grain
- 1 tbsp (15ml) olive oil
- 2 tbsp (28g) unsalted butter
- 10 oz (280g) cremini mushrooms, sliced
- 1 medium shallot, finely diced
- 2 cloves garlic, minced
- 2 tbsp (16g) all-purpose flour
- 2 cups (480ml) beef broth, low sodium
- 1 tbsp (15ml) Worcestershire sauce
- 1 tsp (5g) smoked paprika
- ¾ cup (180g) full-fat sour cream, room temperature
- Salt to taste
- black pepper to taste
Instructions:
- In a medium bowl, whisk eggs, milk, and salt. Gradually stir in 250g flour until a thick, sticky batter forms. Let it rest for 10 minutes.
- Bring a large pot of salted water to a boil.
- Using a spaetzle maker or by pushing the dough through a colander, drop small portions of batter into the boiling water.
- Once the dumplings float to the surface (about 2-3 minutes), skim them out with a slotted spoon.
- Sauté the boiled spaetzle in 2 tbsp of butter until lightly golden for a nuttier flavor.
- Pat the sirloin strips dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a Dutch oven over high heat until shimmering. Sear beef in batches for 1-2 minutes per side until mahogany-colored; remove and set aside.
- Reduce heat to medium. Add butter to the pot, then sauté mushrooms until they release their moisture and brown.
- Stir in diced shallots and minced garlic, cooking for 2 minutes until fragrant.
- Sprinkle 16g flour over the vegetables and stir to combine.
- Stir in beef broth, Worcestershire sauce, and smoked paprika, simmering until the sauce thickens.
- Remove the pan from heat and stir in the room-temperature sour cream to ensure a silky emulsion.
- Return the seared beef to the sauce and toss to coat before serving over the sautéed spaetzle.
