Ingredients:
- 1 cup (90g) Rolled Oats (old-fashioned oats)
- 1 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 2 tablespoons Granulated Sugar (or maple syrup)
- 1 cup (240ml) Milk (dairy or non-dairy), room temperature
- 1 Large Egg, lightly beaten
- 1 teaspoon Vanilla Extract
- 2 tablespoons Melted Unsalted Butter (or coconut oil)
- 1 cup (approx. 150g) Mixed Berries (fresh or frozen - strawberries, raspberries, blueberries, blackberries)
Instructions:
- Preheat oven to 350°F (175°C). Grease the baking dish.
- In a large bowl, whisk together the oats, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix!
- Gently fold in about half of the berries into the oat mixture.
- Pour the mixture into the prepared baking dish. Sprinkle the remaining berries evenly over the top.
- Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out relatively clean.
- Let cool for a few minutes before serving.
