Ingredients:

  • 1 cup (90g) Rolled Oats (old-fashioned oats)
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 2 tablespoons Granulated Sugar (or maple syrup)
  • 1 cup (240ml) Milk (dairy or non-dairy), room temperature
  • 1 Large Egg, lightly beaten
  • 1 teaspoon Vanilla Extract
  • 2 tablespoons Melted Unsalted Butter (or coconut oil)
  • 1 cup (approx. 150g) Mixed Berries (fresh or frozen - strawberries, raspberries, blueberries, blackberries)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease the baking dish.
  2. In a large bowl, whisk together the oats, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the milk, egg, vanilla extract, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix!
  5. Gently fold in about half of the berries into the oat mixture.
  6. Pour the mixture into the prepared baking dish. Sprinkle the remaining berries evenly over the top.
  7. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out relatively clean.
  8. Let cool for a few minutes before serving.
