Ingredients:

  • 60ml extra-virgin olive oil
  • 30ml freshly squeezed lemon juice
  • 5ml Dijon mustard
  • 10ml raw honey
  • 1g fine sea salt
  • 0.5g cracked black pepper
  • 150g fresh baby spinach
  • 150g fresh blueberries
  • 60g toasted walnuts
  • 75g crumbled goat cheese
  • 1/4 red onion, sliced

Instructions:

  1. Place the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper into a small mason jar. Secure the lid and shake vigorously for 30 seconds until fully emulsified.
  2. In a large mixing bowl, combine the fresh baby spinach and thinly sliced red onions. Drizzle half of the citrus vinaigrette over the greens and toss lightly with tongs to coat.
  3. Top the greens with fresh blueberries, toasted walnuts, and crumbled goat cheese. Drizzle with the remaining dressing and give it one final gentle toss to distribute ingredients without bruising the fruit.
