Ingredients:

  • 25 Lotus Biscoff Cookies (160g/5.6 oz), plus extra for decoration (optional)
  • 1 medium ripe but firm banana (approx. 150g/5.3 oz)
  • 1-2 tablespoons Biscoff spread (28-57g/1-2 oz) (optional)

Instructions:

  1. Pulse Biscoff cookies in a food processor until finely ground or place cookies in a zip-top bag and crush with a rolling pin until fine crumbs form.
  2. Slice the banana into rounds approximately ¼ inch (6mm) thick.
  3. Place a spoonful of crushed Biscoff cookies on a plate. If using Biscoff spread, put a tiny dot of the spread onto the crushed cookies, and carefully place a banana slice on top. Add another spoonful of the crushed Biscoff cookies to fully cover the banana slice.
  4. Serve immediately and watch them disappear faster than you can say 'jolly good show!'
