Ingredients:
- 25 Lotus Biscoff Cookies (160g/5.6 oz), plus extra for decoration (optional)
- 1 medium ripe but firm banana (approx. 150g/5.3 oz)
- 1-2 tablespoons Biscoff spread (28-57g/1-2 oz) (optional)
Instructions:
- Pulse Biscoff cookies in a food processor until finely ground or place cookies in a zip-top bag and crush with a rolling pin until fine crumbs form.
- Slice the banana into rounds approximately ¼ inch (6mm) thick.
- Place a spoonful of crushed Biscoff cookies on a plate. If using Biscoff spread, put a tiny dot of the spread onto the crushed cookies, and carefully place a banana slice on top. Add another spoonful of the crushed Biscoff cookies to fully cover the banana slice.
- Serve immediately and watch them disappear faster than you can say 'jolly good show!'
