Ingredients:

  • 16 oz frozen pineapple chunks
  • 0.5 cup pineapple juice, chilled
  • 0.5 cup full-fat coconut milk
  • 4 oz spiced rum
  • 1 tbsp fresh lime juice
  • Fresh pineapple wedges for garnish
  • Maraschino cherries for garnish

Instructions:

  1. Chill your glassware. Place four glasses in the freezer to keep the drink frosty longer.
  2. Layer the ingredients. Add the 0.5 cup pineapple juice and 0.5 cup coconut milk to the blender first. Note: Adding liquids first prevents the frozen fruit from getting stuck at the bottom.
  3. Add the frozen base. Pour in the 16 oz frozen pineapple chunks.
  4. Introduce the spirit. Measure and add the 4 oz spiced rum.
  5. Balance with acid. Squeeze in the 1 tbsp fresh lime juice.
  6. Start on low. Pulse the blender 5 times to break up the large chunks.
  7. Increase to high. Blend for 45 seconds until the mixture looks smooth and thick.
  8. Check for consistency. Stop the blender and use a spatula to push down any stray fruit.
  9. Final whip. Blend for another 15 seconds until a velvety swirl forms in the center.
  10. Serve immediately. Spoon or pipe the mixture into your chilled glasses and garnish with a cherry.
