Ingredients:
- 16 oz frozen pineapple chunks
- 0.5 cup pineapple juice, chilled
- 0.5 cup full-fat coconut milk
- 4 oz spiced rum
- 1 tbsp fresh lime juice
- Fresh pineapple wedges for garnish
- Maraschino cherries for garnish
Instructions:
- Chill your glassware. Place four glasses in the freezer to keep the drink frosty longer.
- Layer the ingredients. Add the 0.5 cup pineapple juice and 0.5 cup coconut milk to the blender first. Note: Adding liquids first prevents the frozen fruit from getting stuck at the bottom.
- Add the frozen base. Pour in the 16 oz frozen pineapple chunks.
- Introduce the spirit. Measure and add the 4 oz spiced rum.
- Balance with acid. Squeeze in the 1 tbsp fresh lime juice.
- Start on low. Pulse the blender 5 times to break up the large chunks.
- Increase to high. Blend for 45 seconds until the mixture looks smooth and thick.
- Check for consistency. Stop the blender and use a spatula to push down any stray fruit.
- Final whip. Blend for another 15 seconds until a velvety swirl forms in the center.
- Serve immediately. Spoon or pipe the mixture into your chilled glasses and garnish with a cherry.
