Ingredients:
- 3 medium ripe bananas (roughly 1.5 cups mashed or 450g)
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 ½ cups (190g) all-purpose flour
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 4 cups (480g) powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
- In a large mixing bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, followed by mashed bananas and vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined (don’t overmix!).
- Divide batter into prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely. While cooling, prepare the cream cheese frosting.
- Spread frosting between and on the top of the cooled cakes.
