Ingredients:

  • 3 medium ripe bananas (roughly 1.5 cups mashed or 450g)
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 ½ cups (190g) all-purpose flour
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, followed by mashed bananas and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined (don’t overmix!).
  6. Divide batter into prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely. While cooling, prepare the cream cheese frosting.
  8. Spread frosting between and on the top of the cooled cakes.
