  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup (240ml) whole milk
  • 3 cups (375g) peeled and diced apples (e.g., Bramley or Granny Smith)
  • 1 tablespoon brown sugar (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the cake pan with butter or line with parchment paper.
  3. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt; set aside.
  4. In a separate bowl, cream together softened butter and granulated sugar until light and fluffy.
  5. Drizzle in eggs one at a time, mixing well after each addition.
  6. Gradually add the dry ingredients and milk, alternating between the two and mixing until just combined.
  7. Gently fold in the diced apples until evenly distributed.
  8. Transfer the batter to the prepared cake pan and smooth the top.
  9. Mix brown sugar and cinnamon and sprinkle on top (optional).
  10. Bake in the preheated oven for 40-45 minutes, or until golden brown and a toothpick comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
